BHINDI FRY IN CHATPATA MASALA
 
Ingredients:
1/2 kg Bhindi
3 tbsp besan
2 Onions
Few Kadipata leaves
1 tbsp ginger garlic paste
1/4 tsp each of haldi, lal mirchi powder & dhania-jeera powder
3 tomatoes, chopped/ground.
2-3 tbsp dahi.
Juice of a lemon
Salt to Taste
Coriander leaves, for garnishing.
How to make:
Wash & dry the bhindi. Cut ends & slit long into 2 halves or cut into 2-3 big pieces per bhindi. Mix in salt and besan. Fry in hot oil till colour changes to light brown. Remove bhindi from oil & keep aside.
Now, add to the hot oil - onion finely chopped, add kadipata, saute till onion is golden brown. Mix in the salt, ginger garlic paste, and all the dry powders salt & stir fry for a minute. Now add finely chopped or ground tomatoes & dai & continue to cook for another 5 minutes till oil leaves sides.
Now mix in the bhindi, squeeze in juice of the lemon & cook a few minutes.
Finally, garnish with coriander leaves.
Your yummy crispy bhindi in a chatpata masala is ready to eat!
