Chatpate masale wale samose

Ingredients


For outer covering

4 cups of maida 
1/2 cup of sooji
1 cup of oil for moin
Salt to taste 
Water as required

Method 

First mix all the ingredients together except water , mix the oil nicely .Then by adding water little by little knead a medium tight dough.Keep the dough for half an hour to rest .

For filling 

6 medium size potatoes
1 tbsp chopped green chillies
2 tbsp chopped ginger
1 cup fresh green peas
1 tbsp chopped coriander 
1 tsp red chilly powder
2 tsp dhania powder
1 tsp amchur powder
1 tsp garam masala
1 tsp anardana powder
1 tsp dried grated amla
Pinch of heeng
Salt to taste 
1 tbsp oil 
1 tsp jeera 
3 cloves

Method

Wash the potatoes (here I have used new potatoes) and cut them into small pieces along with the peel.Put the potatoes in water and wash nicely and strain.Now heat oil in a pan ,add jeera ,cloves and heeng ,let it splutter and then add green chillies ,ginger ,saute for few seconds. Now add potatoes and peas ,mix well and add salt ,mix well and cover the lid and let it cook on low heat until potatoes and peas becomes soft.Remove the lid and add red chilly powder ,dhania powder ,amchur powder ,amla ,garam masala ,anardana powder ,mix well .Here you can add can add chat masala also. Cook on high heat stirring continously for 5-7 min so that the flavours comes out .In the end mix chopped coriander. 

Method for making samosa

Mix the dough nicely and make equal size balls ,a little bigger than the usual roti ones.Roll the balls lengthwise ,the puri should not be round.Now cut the puri from the center ,apply little water on the sides from where it has been cut ,and fold giving shape like a cone .Now fill the stuffing in the cone and seal the sides with water .In this way make more samosas and deep fry them in oil ,on low heat till light brown and crispy.
Please add oil for frying in the ingredients. 
These samosas will remain crispy for a longer period ,it will not become soggy.
