STUFFED BOTTLE GUARD

A delicious and flavorful vegetable , will be loved by all. In spite of making boring same routine bottle guard, try this yummy way. Its a Pure Jain recipe ( NO ONION NO GARLIC).
INGREDIENTS:
400 gm Fresh Bottle Guard
3 pc Fresh Red Chili
4 tsp Oil
1 tsp Cumin Seeds
1/2 tsp Hing
1/4 cup Finely Chopped Tomatoes
For Stuffing:
3 tsp Chopped Fresh Coriander
1/2 cup Leftover Gathiya Crumble
3 tsp White Sesame
4 tsp Grated Dry Coconut
2 tsp Sugar
1 tbsp Lemon Juice (More or less as per taste)
3 tsp Roasted Peanut, roughly crushed
1 tsp Garam Masala
A Pinch Hing
Salt
2 tsp Red Dry Chilli Powder
2/3 tsp Turmeric Powder
3 tsp Coriander Cumin Powder
1/2 tsp Amchur ( Dry Mango Powder)
METHOD:
We Need to use Tender Bottle guard, so no need to peel too much. Just wash nicely and peel very light. Cut cylindrical . Then make a cut into this small cylinders. Cut should be till half way only. It should not fully divide into two . Wash and Cut Red Chilies slightly on a side so can be stuffed nicely . Dont forget to deseed that smile emoticon smile emoticon
Mix all the ingredients for stuffing.. Fill this stuffing into Bottle Guard and Red chili. Rest Stuffing Masala keep aside.
In a non stick pan , heat oil. Add Cumin seeds , when crackle nicely add hing and Stuffed Bottle guard and Red chilli.. Add 2-3 tsp water in it. Cover the lid and put some water on lid. Cook on slow Flame. Cooking vegetable such way is the healthy way . One can also use pressure cooker for this step. You need to cook for a single whistle only. As Bottle guard wont take much time to cook.
Check the vegetable after 6-7 mins, check if Bottle guard is cooked nicely. If not cook more for 2-3 mins. One can add the water, which we placed on lid while cooking if necessary.
Now add rest Stuffing Masala , chopped tomatoes and 2-3 tsp water. Cook for 3-4 mins on medium flame. Garnish with Some coriander.. Serve hot.
